Avocado Toast with Watermelon from watermelon.org has two of my favorite ingredients: Watermelon and avocados. Combine the health benefits of both to make a good-for-you snack or side. Watermelon is a good source of lycopene, an antioxidant that helps protect the body against conditions such as heart disease, inflammation and some cancers. The avocado is a good source of protein, potassium, iron, and vitamins C and B. Grown in the western parts of the state, from north Collier County to Columbia County, watermelon from Florida is available from late March until mid-July. Harvested in Florida from late May through March, the Florida avocado can dwarf other varieties growing as large as 2 1/2 to 14 inches long.
Avocado Toast with Watermelon
Yield: 2 servings.
4 tablespoons mashed avocado mixed with 1/2 teaspoon fresh lemon juice
2 slices whole grain bread, toasted
4 tablespoons diced watermelon
2 tablespoons low-fat feta cheese, crumbled
2 teaspoons freshly chopped mint
1/2 teaspoon fresh lemon zest
1. Spread half the avocado on each slice of the toasted bread.
2. Top with half of the watermelon and cheese, then top with half of the mint leaves and lemon zest.
