Pork with Chilies and Lime
Yield: 6 servings
2 pounds boneless pork shoulder, or boneless pork loin, cut into 1-inch cubes
3/4 teaspoon salt
3/4 teaspoon black pepper
2 tablespoons oil
1 large yellow onion, chopped
3 tablespoons jalapeno chilies, seeded and minced
2 cloves garlic, minced
1 (14 1/2-ounce) can chicken broth
1/4 cup freshly chopped cilantro
1/2 teaspoon fresh lime zest
1/4 cup fresh lime juice
Lime wedges for garnish
Additional freshly chopped cilantro for garnish
Black beans, cooked and warm
1. Season the pork cubes with salt and pepper. Heat the oil in large heavy-bottomed pot and saute pork in batches until nicely browned on all sides, about 5 minutes. Transfer the pork to a plate.
2. To the same pan, add the chopped onions, chilies and garlic and cook, stirring, for 2 to 3 minutes, until the onions are soft. Add the pork back to the pan in along with chicken broth, 1/4 cup cilantro, lime zest and juice. Bring the mixture to a boil. Simmer, uncovered, stirring occasionally, for about 1 1/4 hours, until the meat is fork-tender and the liquid has thickened.
3. Serve the pork garnished with lime wedges and freshly chopped cilantro. Add warm tortillas and black beans on the side.
